Cornbread...Source: Jim Mixson Modified from Indian Head corn meal recipe.



1 C yellow corn meal

1 C all purpose flour

1/4 C granulated sugar

3 t baking powder

1 t salt

1/4 C shortening, liquified

1 C milk

1 T lemon juice

1 egg



Combine all dry ingredients and mix well.  Beat egg and add all liquid 

ingredients. Add liquid to dry ingredients, mixing well.

Pre-heat oven to 425 °F and pre-heat a 10 inch cast iron skillet, 

well greased. Pour in above mix and bake for about 20 minutes.
