Shrimp/Squash/Sausage Casserole...

Ingredients:
1# Yellow crookneck squash
1# zucchini
1/2# sweet Italian sausage
1# raw shrimp, deveined & tail off
5-6 slices smoked bacon
2 C onion, finely chopped
3 garlic cloves, minced
2 eggs
butter as required
olive oil as required
1/4 to 1/2 cup shredded cheddar cheese
1 T chili powder
1/2 T coarse ground black pepper (I first used 1 T but that's a bit too much.)
1 T JGM Mix 4+ (This is my concoction; see the recipe.)

Cooking and serving instructions:
Prepare squash by slicing lengthwise and then chopping into small pieces
Shrimp may be left whole or chopped up (I prefer whole)
If the sausage is stuffed, remove the casing and crumble
Chop bacon into small pieces
Cook bacon and sausage together in a fairly large pot starting with a bit of olive oil
	and about 1 1/2 T butter.
When fat is rendered, add onion and garlic
Add sliced squash and seasonings and stir the mix thoroughly
	I added 1 1/2 T butter at this point.
Continue cooking until the squash is done (depending on liquid content, it may brown)
Beat eggs and pour over the mixture, stirring in thoroughly
Pour into a casserole dish and place in a pre-heated oven at 350 °F
Bake uncovered for 20 minutes then top with the grated cheese and 
	continue baking uncovered for another 10 minutes
