Whipped Cream Substitute...

Source: Jim Mixson (Modified from a recipe in "Don't Eat Your Heart Out Cookbook" by Joe Piscatella.)

 

3/4 C evaporated milk

1 1/4 T lemon juice

1/2 t vanilla

1/2 C sugar

1 egg white

 

Use chilled bowl, beaters and milk.

Beat all ingredients, except sugar, at high speed.  When it thickens, add 

the sugar, folding in with a spatula.  Serve immediately or refrigerate.  

Beat again if the  mixture separates.

The above makes 8 servings.  For 4, use half of all ingredients, except 

egg white.
